The potential for production of local seafood on the Helgeland coast is renowned. We do not see most of the resources, but we know they are present on the seabed. We harvest and utilize these local seafood resources with a focus on new species that we have on Helgeland, products that are in high demand all over the world. We deliver both fresh, frozen, and live products of the highest quality.
To bring out the best qualities in our products, we use pressure cooking and a quick freeze with nitrogen when the product is not meant to be stored or sold alive. By boiling with pressure, we get firm and good outcomes and reach temperatures up to 150 degrees.
When using nitrogen, this results in rapid freezing of the products, which means that the cells in the products do not burst. When these products are thawed, we take care of texture, color, and consistency, just as if it were a fresh product. Liquid nitrogen has a temperature of about -196 degrees Celsius, which means that we reach a core temperature of about -15 degrees Celcius in a short amount of time.
