The green sea urchin is probably one of the most complex and exciting seafood products sold in the Norwegian marketplace today.

The urchin fishing is carried out by an in-house team of freedivers in partnership with Statsnail, who endure the cold wintery waters of Trondheim Fjord to handpick only the best quality urchins from the seafloor, allowing the sea urchin fields to grow sustainably for future seasons. The green sea urchin represents a substantial environmental issue due to its damages to the kelp forests where the sea urchin habitats. When left unchecked, sea urchins can decimate a kelp forest entirely.
